Heavenly Ham Casserole

I have been missing this amazing old family recipe; that has passed down through the generations, often taken to family reunions, holiday gatherings or other carry-ins.  Since I have been following Trim Healthy Mama, the  original recipe as it is written, doesn’t fit into the guidelines as a legal  dish to prepare and eat.   Recently, I was pondering how I could adapt the old favorite recipe to the Trim Healthy Mama lifestyle I have been following.  I have been messing with this in the kitchen for a while, I think I have finally come up with something that will work, so I decided to share it here.  The original recipe was made with potatoes.  We all know that potatoes are a Trim Healthy Mama “no-no.”  The adapted recipe below, is the closest thing to the original recipe I have found.  This would definitely be considered an "S" Dish. I hope that you will all try it and that you all enjoy it. Idahoan Signature Russets

Many nights I come home after a tough day at the office. I usually have barn work to do to take care of the Baby Norwegian Dwarf Goats at Campbell's Charming Country Farm. These little guys and the little gal are like therapy after a bad day. Their faces and personality are so cute. They make a bad day better.  I have dinner to prepare for my family. Each evening I fuss around trying to figure out what to prepare that everyone will like. Also, figuring out what I can make quickly as I usually don't have allot of time. I recently received the Idahoan Vox Box free to try from Influenster in exchange for my fair and honest opinion of the product. I decided to break into the Idahoan Signature Russets packet from the Vox Box. I made cube steak, brown gravy, Idahoan Signature Russets and Corn. The Russets were very quick and easy to prepare in just a few simple steps. From package to plate in less than 10 minutes. Even better was the flavor and light creamy buttery goodness. Th

Yummy Pumpkin Whip

What does one trying to pick themselves up after falling off the wagon.  Off the Trim Healthy Mama wagon.  The wagon, where you eliminate sugar from your life.  A 43 year life of sugar addiction makes it impossible for allot of people to just give it up.  Even more difficult, is how does one satisfy the crazy, overtaking desire for sweetness?  Very carefully and planned out very strategically.  I know no other way.   So last night, I had that crazy "I am going to cave into the Pumpkin Pie Ice Cream if I don't find something sweet quick", desire for sweetness. So I whipped up some of this yummy pumpkin whip.  Did it work?  Certainly so.  I ate it and quickly went to bed. I know we have all been there so I decided to share my pumpkin concoction with you.  I hope that you enjoy.  Let me know if you try it and if you tweak it, please share your tweaks in the comments of my blog below. Cauliflower Buffalo Chicken Casserole

I stumbled onto this yummy bowl of deliciousness by accident.  One day after a party, I had some left over buffalo chicken dip.  I decided that I should do something with the remaining dip as I was afraid no one would eat it.  I had made riced cauliflower for lunch the day of the party.  This combination was created with the thought that, hey both are good apart from each other, they have to be amazing together.  This is a dish that I will continue to make for my family for years ahead. It is also Trim Healthy Mama Friendly.  It is considered an “S” atisfying meal.  I ran the numbers; it has 13g fat and 7g carbs.  I think that it could be made lower if using a fat-free cheddar cheese.  I hope that you all enjoy this. Sriracha Ginger Shrimp Bundles

Earlier this week, I received this Country Crock product free compliments of @Influenster for testing purposes. I had also been craving an Asian inspired dish.  Yesterday, while at a new Kroger Marketplace near my hometown, I decided to break out of my shell and try Sushi.  No, I didn't try anything with raw fish, but I did try a Spicy Crunch Roll. It was delish. I am also following the Trim Healthy Mama Plan so I wanted to find a way to make an Asian inspired Sushi without the rice. So last night I put my skills to the test. I think I came up with something very doable.  Something that myself and many others will enjoy.   This would be a "S"atisfying dish, due to the carbs being less than 10g and the fat content being more than 5g.  You can make this a crossover dish by using avocado in place of the Ginger Sauce.  I am still trying to figure out a way to make this a "FP" full pull.  If any of my fellow Trim Healthy Mamas have any suggestions on alterations,

Ages and Stages

We all have those precious memories of times in our lives that we often go back to. Those times that bring about a special happiness because we are reliving a time in our lives when nothing else seems to matter or interfere.  I personally take myself back to childhood days when I used to go with my pa to visit my grand dad at the grain elevator.  I reminisce today about the sights and sounds of the country life.  I enjoyed life back then as a small child.  I hear the sound of the grain dryers and the grain switching from one silo to the next.  As I go back to those days, I remember the vintage pop machine that was just inside the office, grand dad used to always buy me a coke when we would visit.  As I think about the new Coca-Cola Life, I am taken back to those days. Days when you could buy a glass bottle from a soda machine.  Recently I received a bottle of Coca-Cola Life free to provide a review, giving my honest opinion of the product.  What a more appropriate name for the

A Little Piece of Chocolate Heaven

What better way to start the day than with some THM approved Strawberry Chocolate Bars. Who would have known or thought that there was a secret ingredient in the base of these bars? By the looks and the taste of them, I certainly would have never guessed. Just what is that secret ingredient, black beans. My husband and my children turned up their noses as I told them that I used the draining black beans in my yummy brownies. The end result was so much better than I ever would have anticipated. This post will be quite brief. I am so excited about this new lifestyle, I can eat foods that I never would have imagined and still lose weight. So let me just get straight to the guts of this yummy treat. For those following Trim Healthy Mama I ran the recipe past some experts in the plan. This was approved as an S and the serving size can be decreased to 9 instead of 16 and still be on plan. Personally, I find that a small serving of this is plenty.
